Marinated strawberries with ricotta and basil

We are working hard in the kitchen these days. The heat makes the work extra tough. We have three air conditioners, and three fans in the kitchen but four ovens constantly throwing off a lot of heat. It really does make thing so much harder. 

The heat makes me loose my appetite at work and the only thing I feel like eating is light refreshing bites. I absolutely love this recipe especially when strawberries are extra sweet and I get to use the basil that is thriving in my backyard. 

I also like this recipe as a little appetizer or serving this as part of a cheese platter in this case I serve the everything deconstructed so our guests can put their bites together themselves.

  

Marinated strawberry crisps with ricotta and basil

Marinated Strawberries:
16 oz strawberries, sliced
3 tablespoons balsamic vinegar
1 tablespoon sugar

Cut the strawberries and add balsamic vinegar, and sugar in a bowl. Stir and set aside to marinate.

For The Ricotta:
1 cup ricotta cheese
2 tablespoons chopped basil
1 tablespoon honey
Pinch salt and pepper

In a medium bowl, stir together the ricotta, honey, basil, salt and pepper.

Grab some Nordic crisps and add a generous layer of ricotta spread, top with marinated strawberries, drizzle with balsamic glaze and garnish with fresh basil. Serve immediately
